Sweet Lemon

Ingredients:

4 tablespoons lemon juice
2 tablespoons sugar powder
Pinch of crushed black pepper
Pinch of salt
A little fresh basil
Mint leaves, finely chopped

Method:

Mix thoroughly. This dressing contains no oil, so it’s extra healthy!

Salad Cream

Ingredients:

200 g fresh cream
4 tablespoons olive oil
1 teaspoon mustard powder
3 teaspoons powdered sugar
Pinch of salt
3 teaspoons lemon juice
¼ teaspoon freshly ground pepper

Method:

Mix thoroughly.

   

Red Chilli

Ingredients:
1 pinch of red chilli powder
1 tsp. ginger
3 garlic cloves
Juice of 1 lemon
2 tbs. white vinegar
1/2 tbs. sunflower oil
5 tbs. water
2 pinches of salt
1 tsp. sugar powder
1 tsp. sesame seeds

Method:

Mix thoroughly.

Mint and coriander

Ingredients:

3 tsp. coriander
3 tsp. mint
5 garlic cloves crushed
4 tbs. white vinegar
1 tbs. sunflower oil
5 tbs. water
1 tsp. sugar powder
2 Pinches of salt
1 pinch od pepper

Method:

First, mix the mint, the coriander and the garlic with white vinegar. Then add the others ingredients.

   

Eggless Caesar Dressing

Ingredients:

4 tbs. olive oil
4 tbs. vegetable oil
4 tbs. freshly grated Parmesan cheese
3 tbs. fresh lemon juice
3 tbs. white vinegar
1 tbs. light or regular mayonnaise
¼ - ½ tsp. finely minced garlic
½ tsp. freshly ground pepper
½ tsp. Worcestershire Sauce
Pinch of salt

Method:

Mix thoroughly. Serve with shaved Parmesan. Makes 1 cup.

Thai Peanut Dressing

Ingredients:

2 tbs. natural peanut butter, crunchy or smooth
2 tbs. soy sauce
6 tbs. vegetable oil
6 tbs. rice vinegar (or white vinegar)
4 tsp. hot pepper sesame oil
1-2 tbs. honey
Half teaspoon salt
Pinch of fresh ground black pepper

Method:

Mix thoroughly. Toss with sesame seeds and/or peanuts.
